Peanut Butter Bars
This recipe is one of my favorites. My first memory of trying these peanut butter bars was during the Christmas that my husband and I were engaged. His dad made these bars for neighborhood plates. I remember "Dad" with his hands in the bowl mixing and squishing all the ingredients together. Now every time I make them I think of my father-in-law and the great person he was.
| 3 1/2 | c | Sugar - Powdered |
| 1 | c | butter |
| 1 | c | Peanut Butter - creamy |
| 2 | c | Graham Cracker Crumbs |
Put all in a big bowl and mix well with hands. It is best of the butter is softened, not melted. Press into a jelly roll pan.
| 2 | c | chocolate chips |
| 1/2 | c | Peanut Butter - creamy |
Melt chocolate, mix in peanut butter. Spread evenly over graham cracker layer.
Set in fridge about 1 hour.
Cut into desired pieces and serve (making sure you hide some for later)
I usually use Milk Chocolate Chips for the topping.
The peanut butter in the chocolate topping helps the chocolate not set up quite so hard. Without the peanut butter the chocolate would crack when cut. The original recipe had no pb, but I modified it because we like it better this way.
